ATTA-BISCUITS

Preparation Time :25-30 minutes

Ingredients Amount

Whole wheat flour (atta) 1 1/4 cups

Bran 2 tbsp

Refined flour (maida) 1/3 cup

Butter (chilled) 110 gm

Powdered sugar 1/2 cup

Milk as required

Preheat the oven to 160ºC.Take the atta in a bowl. Add bran, refined flour and mix. Add chilled butter cut into small pieces and mix with fingertips till the mixture resembles bread crumbs.Add powdered sugar and mix. Add cold milk (or water or a mixture of the two) and knead lightly.Sprinkle some flour on the worktop and roll out the dough to one-fourth inch thickness. With different-shaped cookie cutters cut out the biscuits.Place the biscuits on a baking tray keeping a space between each. Bake in preheated oven at 160ºC till done.


BAKED-METHI-PURIS

Preparation Time :15 minutes

Ingredients Amount

whole wheat flour 1 cup

chopped fenugreek leaves ( methi leaves) 1/2 cup

turmeric powder ( haldi ) 1/2 tsp

chilli powder 1 tsp

dhania–jeera powder 1 tsp

oil 1 tsp

salt to taste

Oil for greasing

Combine all the ingredients and knead into a firm dough using as much water as required.Divide the dough into 30 equal portions and roll out each portion into a circle of 3" diameter.Place on a greased baking tray and prick all over using a fork.Bak

e in a pre-heated oven at 180 o C (360 o F ) for 10-15 minutes or till the puris are golden brown, turning them around once.Cool and store in an air tight container.

OATS PATTIES

Oats Patties

Oats Patties are a fibre rich, low cal, low fat, snack for diabetics and those who want to lose weight. This recipe makes 1 serving of 3 patties.

Ingredients Amount

Oats flakes or bran 1 Tbsp

Sweet Corn 1 Tbsp

Green peas, cooked 2 Tsp

Carrot - diced 1 Tsp

Green chilies 1-2 nos

Ginger Chili Paste 2 tsp

Oil 1 tsp

Salt to taste

# Steam the sweet corn and mash it coarsely.

# Mix oats flakes or bran, mashed sweet corn, green peas, carrot and ginger chili paste. Add salt to taste.

# Make three patties from the above mixture.

# Bake in an oven for a fat-free recipe or smear very little oil on the tava and shallow fry the patties.

# Serve hot with green chutney.

"Recipe of a simple cake"
Ingredients
* Condensed milk - 400 gms, sweetened
* Maida - 200 gms
* Butter - 100 gms
* Soda bicarbonate - 1 teaspoon
* Aerated soda - 125 ml
* Dry fruits - 200 gms, chopped (Cashews, almonds, walnuts, cherry raisins)
* Sugar - 6 tablespoons
* Water - 50 ml
Method
* Heat the sugar in a pan till it melts and becomes brown and then add the water to make caramel syrup.
* Melt the butter and then add the condensed milk.
* Mix the maida with the condensed milk mixture and the soda.
* Then add the caramel syrup and the chopped dry fruits and mix well all these.
* Grease a cake tin with butter and pour this mixture into the tin and bake for 45 minutes at 150 degrees in an oven pre-heated to 150 degrees.
